Your Questions About Food Network

Ken asks…

I need to contact Alton concerning recipes listed on FN that are not correct when campaired to his Show?

Anyone have a legit email address? Food Networks editing department never gets around to doing its job
Oh, Ive tried there already, but there isn’t a place to email =(

Michelle answers:

I know the Food Network in-box que is HUGE. I’ve submitted a few questions to them in the past and still have at least 1 outstanding query. I know that they do their best to answer questions, but if you simply leave a comment, you will never hear back from them. If you pose your comment about incorrect recipes online as a question, you’re likely to get an answer, but I can’t say for sure that any change(s) to the recipe(s) will actually occur. Maybe you can start a website with corrected Food Network recipes? ; )

What type of dough was used by Paula Deen with the cheeseburgers she made 2 nights ago?

I was watching the Paual Deen show late friday night/early saturday morning on the food network and she made burgers then wrapped them in what i believed to be phyllo dough and baked them. Is anyone sure of what type of dough she used?

Michelle answers:

I seen that show before – here’s the recipe
Jamie’s Cheeseburger Pie Recipe courtesy Paula Deen, 2007
Show: Paula’s Party
Episode: Pie in the Sky

1 pound lean ground beef
1/2 cup sweet onions, preferably Vidalia onion
1 tablespoon steak seasoning (recommended: Montreal)
1 tablespoon steak seasoning sauce (recommended: Dale’s Steak Seasoning Sauce)
5 slices cheese, preferably American, Swiss, or sharp Cheddar
1 sheet frozen puff pastry dough*
1 egg yolk

*Frozen puff pastry dough should sit at room temperature for about 20 minutes.
Preheat the oven to 375 degrees F and preheat the grill.

Mix the ground beef, onion, steak seasoning, and seasoning sauce together (using your hands is the most efficient way to do this). Form into 5 small flat patties. Grill the hamburgers to medium-well. (You may also pan-fry the patties.) Remove from the grill and top each burger with a slice of cheese of your choice.

Roll the puff pastry sheet to flatten slightly. Cut it into 5 relatively even rectangles.

Cover each burger with a piece of puff pastry and wrap it around the bottom, pinching all of the edges to seal. Place on an un-greased baking sheet, pinched side down.

Whish together the egg yolk and 1 teaspoon water to make an egg wash. Brush each wrapped pastry with the egg wash. Bake for about 15 minutes, until the puff pastry is nice and brown.

Richard asks…

What is the meat substitute thats made from bread dough?

I saw this thing on the food network where this woman made a vegan stew or goulash using this meat substitute she made herself. It was something like, You take all the dough you need for a loaf of bread, run it under cold water till it shrinks and the carbohydrates are out, and then bake it, and put in recipes as you would chicken or beef cubes.

What on earth was that and is there an official recipe or can I order it online?

Michelle answers:

That is a wheat flour dough which is washed in a filter separating the starch from the gluten. The gluten will be left in the filter and the starch together with the water.

Know more about it.

deep fry it and dip it in soy sauce with sugar and lemon juice.

People with Celiac disease or Gluten sensitivity should not consume gluten
